Chunky Mango Guacamole

  • 2 large or 3 small Avocados
  • 1 ripe Mango
  • 2 Roma Tomatoes
  • 1/2 Red Onion
  • 1 Hatch Chili (or other mild chili)
  • 1 Jalapeno (or other spicy chili)
  • The juice of 1 Lime
  • Half bunch of Cilantro 


Chop the Mango, Avocado and Tomato into large chunks. Throw it in a large bowl.

Dice up the red onion, peppers, and cilantro fairly small. Add to the mixture.

Pour lime juice over the mixture.  Stir up with a spoon.  Avocados should be soft but still chunky.

I love to serve this with Organic Blue Corn Tortilla Chips.  But it is also great on Tacos, Fajitas or any Mexican dish.  Enjoy!
