Easy Kale Quinoa Salad

Cook quinoa according to package and let cool.

4-6 servings

Ingredients

  • 1 cup cooked quinoa
  • 2 large tomatoes (or a good handful of cherry tomatoes), diced
  • 1 small cucumber, diced
  • 2 small avocados, diced
  • 2 green onions, chopped
  • 2 large handfuls of kale, chopped
  • 1/2 can of Garbanzo Beans, rinsed (optional)
  • Tahini Goddess Dressing
  • Olive Oil
  • Apple Cider Vinegar
  • Juice of half a lemon
  • Your choice of fresh Basil, Cilantro or Parsley, diced
  • Salt and Pepper to taste

Directions

Add all dry ingredients to a mixing bowl.  Add a good drizzle of olive oil, and dressing.  Add a few splashes of Apple Cider Vinegar and the lemon juice, salt and pepper.  Mix and, according to desired consistency and taste, add more dressing, olive oil or ACV.  Chill and Enjoy!

Notes

Always use organic ingredients when possible.
