Roasted Veggie Medley over Black Rice

Always use Organic or Local produce when possible.

6 servings

Ingredients

  • 2 cups black rice
  • 1 large sweet onion
  • 1 yellow pepper
  • 1 red pepper
  • 1 orange pepper
  • 2-3 cloves garlic
  • 2-3 Granny Smith or other tart apples
  • 1 can chick peas
  • Drizzle of Olive Oil
  • Salt and Pepper

Optional 

  • Organic White Cheddar Cheese, shredded
  • 4-5 Andouille Sausage links

Directions

Preset Oven to 425 degrees

Chop onions, peppers, apples into 1/2 inch pieces.  Toss them in a large roasting pan.

Mince Garlic and add to pan.

Add Chick peas.  Drizzle with olive oil, salt and pepper.  Toss the mixture, cover and put it in the oven for 50-60 minutes.


Cook Black Rice according to directions, usually 40-45 minutes.


Serve roasted veggies over the black rice.  Enjoy!


I think this makes a great Vegan dish but if you want animal products:


Grill Sausage, about 10-15 on each side.  Slice and serve over the veggies.  Top with a touch of shredded cheese.
